
Ingredients :
6 Kg glutinous rice
18 pieces small wine biscuit (酒餅)
150ml water
Step1 ~ Cook the glutinous rice with a rice cooker, need to cook 3 to 4 rounds to finish the
cooking of 6 Kg glutinous rice (preferably cook at night as need to let the rice cool down)
Step2 ~ Get ready the wine biscuit and compress it into powder form.
Step 3 ~ Ensure that the glutinous rice is completely cooled down. Do not proceed to the next step if rice is still warm. The wine will be sour if rice is not completely cooled down.
Step 4 ~ Early in the next morning, get ready the ceramic pot and add 1st layer with the wine biscuit powder.
Step 5 ~ Then place 1 layer of glutinous rice on top of the wine biscuit powder.
Step 6 ~ Cover with another layer of wine biscuit powder on top the glutinous rice.
Keep repeating Step 5 and 6 till all the ingredients is used up and pot is filled.
Step 7 ~ Finally pour a little bit of water cover evenly on top of those ingredients.
Step 8 ~ Keep it at a Safe Place! Place the pot on top of a big plate and put some water into the plate to avoid ants attack.
Note :
1) Pour 1 or 2 bottles of rice wine (can be purchased from the provision shop or supermarkets)
on the 3rd day to make it more fragrance and produced a stronger taste.
2) Homemade Chinese Rice Wine (米酒) will be ready after 20 days.
3) With good result may produce 10 - 15 bottles (1 litre) sweet & tasty Chinese Rice Wine..
According to old folks’ tale that Chinese rice wine cannot be produced on Chinese Calendar
Day No. 3, 6 & 9 (初三, 六 & 九).
